Hot Fudge

8.1 oz Heavy creamÂ
3 oz Dark brown sugar
1.5 oz Cocoa powder
4 oz Golden syrup (can substitute corn syrup or glucose)Â
9 oz. Taste chocolate (whatever % you like)
1 oz. butter (2 TBSP)Â
½ tsp sea saltÂ

Directions:Â
- In a small saucepan, combine the cream with the brown sugar, cocoa powder and golden syrup and bring to a boil over moderate heat, whisking constantly.Â
- Reduce the heat to low and simmer for 1 minute.Â
- Remove from the heat and add the chocolate, butter and salt; whisk until smooth.
- Scrape the hot fudge into a bowl and let cool to room temperature.
